Each year ALITA’s sparkling wine masters explores great variety of wines from different South European vineyards to meet a quality standard of ALITA sparkling wine. Afterword various grape combinations are discovered to get a proper shape of the taste. And this is just a beginning of journey in order to make ALITA sparkling wine.
WINEMAKING
ALITA Selection is a line of naturally fermented sparkling wine produced using Charmat method. The taste variety of this line is based on distinctive characters of different grape varieties dominating in the wine.
Dominating grape variety in this blend is ‘Sangiovese’. Residual sugar 45 g/ltr.
The Charmat method begins, like the traditional method, with the creation of an uncarbonated base wine. This wine is mixed with a measure of sugar and yeast (together called the liqueur de tirage), then put in a large stainless steel pressure tank, or autoclave. The yeast and sugar cause a second fermentation in the closed tank, which is held under pressure so the carbon dioxide from the fermentation is forced into the wine. The second fermentation takes one to six weeks, after which the fizzy wine is immediately filtered and bottled. The dosage is added at bottling, usually to a brut level of sweetness (6–12 grams of sugar per liter).
TASTING NOTES
The nose reveals fresh fruits and berries, while the palate is lightly fruity with a pronounced finish of ripe strawberries.
FOOD PAIRING
Suitable as an apéritif. Pairs with dried ham, cheese, smoked salmon, chocolate, raspberries, and chocolate-covered berries.
SERVING TEMPERATURE
Serve chilled to 8 °C.
